Avocado Bacon and Eggs

Another food I have a love-hate relationship with is the avocado... I know I need the healthy fats in my diet, but sometimes I just can't stand the taste. I like them in my smoothies and I like guacamole, but sometimes I'm just not in the mood for it.

The original recipe had 1 Tbs of cheese, which I've omitted for my diet, but you are more than welcome to add back in!

This is one of those quick breakfasts that you can throw together and bake while you get ready for work or get the kids ready for school. It could also be a great afternoon snack, as well.



You will need:


  • 1 medium avocado
  • 2 eggs
  • 1 piece of cooked bacon
  • pinch of salt
  • fresh chives
Preheat oven the 425 degrees.
Cut the avocado in half and remove the pit. Scoop out some of the avocado so you have room to add the egg.


Place the halves on a baking sheet or muffin tin to keep them from falling over.
Crack the egg inside the avocado, add the pinch of salt, and fresh chives. You can add cooked bacon if you wish.


Bake from about 15 minutes.
