Cauliflower Fried "Rice"

I don't know about you, but I have a serious Chinese food substance abuse problem. I seriously should be in a support group, I crave it everyday.

Thanks to this recipe I don't have to feel so guilty about pigging out on Chinese food. Add a little chicken, shrimp, or beef, and this is the perfect meal-replacement for the greasy Chinese that we all know and love.

Would you believe me if I told you that this tastes just like fried rice?!?! Well, you should give it a try and you won't be sorry!

I paired mine with a quick Coconut Lime Shrimp! Enjoy!



You Will Need:

  • 3 cups grated cauliflower (I used a food processor, but you can also hand grate it)
  • 1/2 cup frozen peas
  • 1/2 cup carrots, thinly sliced
  • 3-4 garlic cloves, grated
  • 1/2 cup onion, diced
  • Handful scallions
  • 1/2 tsp EVOO
  • 2 eggs, scrambled
  • 3 Tbs coconut aminos

In a large pan, saute the garlic and onion in olive oil on medium/high heat, until onions become soft and transparent (2-3 minutes).

Add the peas and carrots and cook until the carrots begin to soften and peas are heated through, 3-4 minutes.



Stir in the scrambled eggs, cauliflower, and coconut aminos. Cook, stirring frequently for 5-7 minutes.




Add in your cooked protein and enjoy this guilt-free non-takeout meal!
