Breakfast Frittata

Frittatas are such a fun, alternative to scrambled eggs or an omelet. It's perfect for brunch or a family gathering because you can feed an army for not much money.

You can really add any combination of vegetables, protein, and cheese if you're not paleo or dairy-free.



You Will Need:
1 cup spinach, chopped
1 cup mushrooms, chopped
1 Tbs coconut oil
3/4 cup onion, diced
8 eggs
1 tsp black pepper
1 tsp salt
Cooked bacon


  • Preheat oven to 350 degrees.
  • In a large oven-safe skillet, heat 1/2 Tbs coconut oil over medium heat.
  • Saute vegetables for 3 minutes, until the onion is translucent and the mushrooms have softened. Remove from heat and set aside.

  • In a medium bowl, whisk eggs.

  • Heat the remaining 1/2 Tbs oil over medium-low heat.
  • Pour frittata mixture into the skillet and cook for 4-5 minutes.

  • Transfer skillet to oven and cook for about 12 minutes, or until the frittata is spongy to the touch.

  • Slice and serve with crumbled bacon on top and a dash of pepper.
