I have to admit that I just added the seasoning to taste and omitted the spicy spices and I used fresh tomatoes instead of canned. You can choose to do either way, it still turned out great!
It's rich in flavor and will taste like a gourmet meal without the high price tag. The secret is in the sauce and gives you that, "hmmm, what's that ingredient" feeling.
Impress your family and friends with this winning dish!
Ingredients:
- 1 pound of chicken breast or thighs (I used thighs)
- 1 tsp House Seasoning Blend (see below)
- EVOO
- 1 cup onion, diced
- 2 cloves garlic, grated
- 1 batch Italian Season Blend (see below)
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1 can fire-roasted tomatoes
House Seasoning:
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp cayenne
- 1/2 tsp black pepper
Italian Seasoning:
- 1 tsp basil
- 1 tsp oregano
- 1/2 tsp marjoram
- 1/2 tsp thyme
- 1/4 tsp red chili flakes
Dust the chicken on both sides with the House Seasoning Blend.
Heat a large skillet over medium-high heat and add olive oil.
Add the chicken to the skillet and sear on both sides, don't completely cook through.
Set the chicken aside.
Reduce the pan to medium and add a little more oil, if needed.
Add the onion, garlic, Italian Seasoning Blend, salt, and cinnamon. Cook, stirring often.
(This process makes this quick sauce taste like it's been simmer all day long)
Cook until the onion is translucent and the garlic and herbs are fragrant.
Add the tomatoes and mix together.
When the sauce bubbles, add the chicken back to the pan, cover and reduce to a simmer.
Simmer for 15-20 minutes, or until chicken is cooked through. Serve with the tomato sauce on top of the chicken. I paired mine with a simple salad. Yum!
