Paleo focuses on vegetables, fruits, and proteins. So, pairing two proteins together, chicken and bacon, is not unusual. Luckily, my husband and I love meat and thankfully my son has come around to it. For awhile we couldn't get him to eat any meat and now he's a chicken-fiend and really likes seafood too.
This recipe is definitely an easy one and super yummy. I've made this a few times before and it's a quick weekday meal.
You Will Need:
2 lbs boneless, skinless chicken breast or thighs
1/4 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder
2 lbs bacon
1/3 cup raw honey
1/2 cup ground mustard (powdered)
3 Tbs apple cider vinegar
- Preheat oven to 400 degrees.
- Sprinkle the chicken with salt, pepper, and garlic powder.
- Line a baking sheet with foil and place a wire rack on top to circulate the heat around the chicken.
- Wrap the bacon around the chicken and place on the wire racks.
- Mix the honey, ground mustard, and apple cider vinegar in a small bowl until combined.
- Baste the top of the bacon chickens and bake for about 15 minutes.
- Turn over the chicken and baste the other side. Bake for an additional 15 minutes or until bacon is crispy and chicken is cooked through.
