Bacon Wrapped Chicken

As you can probably tell by now, it's no secret that my family and I eat a lot of chicken. We do eat beef, lamb, and seafood, but our diet is mostly chicken.

Paleo focuses on vegetables, fruits, and proteins. So, pairing two proteins together, chicken and bacon, is not unusual. Luckily, my husband and I love meat and thankfully my son has come around to it. For awhile we couldn't get him to eat any meat and now he's a chicken-fiend and really likes seafood too.

This recipe is definitely an easy one and super yummy. I've made this a few times before and it's a quick weekday meal.





You Will Need:

2 lbs boneless, skinless chicken breast or thighs
1/4 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder
2 lbs bacon
1/3 cup raw honey
1/2 cup ground mustard (powdered)
3 Tbs apple cider vinegar



  • Preheat oven to 400 degrees.
  • Sprinkle the chicken with salt, pepper, and garlic powder.
  • Line a baking sheet with foil and place a wire rack on top to circulate the heat around the chicken.
  • Wrap the bacon around the chicken and place on the wire racks.


  • Mix the honey, ground mustard, and apple cider vinegar in a small bowl until combined.

  • Baste the top of the bacon chickens and bake for about 15 minutes. 
  • Turn over the chicken and baste the other side. Bake for an additional 15 minutes or until bacon is crispy and chicken is cooked through.
