Zesty Paleo Meatloaf

I made this yummy meatloaf last night and I can't wait for the leftovers already.
It's packed with a ton of veggies and ton of flavor.

I paired my meatloaf with steamed green beans.

My picky almost 3 year old son ate his entire dinner plate, which is unheard of. He usually fights me at every meal unless it's grilled cheese, pb&j, or waffles haha.

So, kid-tested, kid-approved!!


You Will Need:
  • 2 lbs ground beef or ground turkey
  • 3 eggs, whisked
  • 1/2 cup almond flour
  • 1/2 onion, chopped small
  • 1 (10oz) package frozen spinach, thawed
  • 1/2 red bell pepper, chopped small
  • 1/2 cup paleo-friendly BBQ Sauce or Ketchup
  • 1 tsp chili powder
  • 1 tsp salt
  • 2 garlic cloves, grated
  • 1 tsp oregano
  • 1 tsp thyme
  • 1/2 tsp cayenne
  • 2 Tbs olive oil


Preheat oven to 350 degrees.

Heat oil in skillet over medium heat and saute onions and peppers until tender.




Add spinach, garlic, and spices to the pan, stirring gently. Set aside.



Put uncooked ground beef in a large bowl.
Add the whisked eggs and almond flour. Mix with hands.



Add the cooled veggies to the meat bowl and mix until combined.

Form and place into a loaf pan.



Pour the BBQ Sauce over the top to cover the meatloaf.

Bake for 1 hour to an 1 hour and 15 minutes.


Allow to sit for about 10 minutes before serving.
